Where did the time go...


















The 12th of January 2013 has been and gone, that's right my wedding has happened!! My honeymoon has happened! Where did the time go? Life is slowly getting back to 'normal'. In theory now that the wedding is over I should have plenty of time to blog but lets not make any promises just yet!

My wedding day was truly brilliant, the best day of my life so far. Once I receive my professional photos (which should be soon) I will post more about the day but, in short, it really was a perfect day which couldn't have been any better. Plenty of guests left saying it was the best wedding they had ever been too. There were tears and laughter, dancing and singing and plenty of love. 

The honeymoon in Thailand was also very awesome, I am in love with Thailand and can't wait to go back there someday. Thai people are so giving and their food is amazing plus they live in a very beautiful country.

Lately I find myself wasting hours re-reading our wedding cards, re-reading our guest book and going over the same photos on facebook. I just want to relive our wedding day, I am sad it's over and that I never get to do it again but it's also very awesome being married and being able to call Alex my husband.

We both went back to work this week which was a bit of a challenge and our body clocks are taking sometime to get used to the working hours after five weeks away. My body is also begging me to eat a little healthier and get moving a little more. Back riding the bike to work was also a little challenging after not riding for a month but that should get easier and quicker over the coming weeks. 

So now the weddings over what do I plan on doing with all my free time?? Well lots of blogging of course, I think now I will post more about the wedding then I did leading up to it. A little backward I know. Some travel posts are also in the works. I would also like to focus on doing some more exercise and riding on the weekends, spending time with family and getting my house organised. I really need to clean out cupboards, de-clutter and spring clean (in summer?).

Welcome Back Sim

Okay so I have been unbelievably neglecting my blog and therefore neglecting myself, but I am back! And I am back with plenty more to report on.  Last week I was lucky enough to be part of my best friend's wedding and will give you all the details about that soon.  I hosted a hens party the weekend before and have attended a couple of psychologist appointments learning a lot about the mind that I can't wait to share.  


As far as my weight loss mission has been going...well it hasn't really at all.  I have been going to the gym about twice a week on average but I really need to eat healthier.  Unfortunately it didn't take long before I couldn't be bothered taking salads to work any more and now I buy my lunch everyday but I am not worried about that as I usually buy a salad sandwich, a wrap or sushi which is all pretty healthy.  It's my chippies addiction and need for food when stressed that is my downfall.  I seem to always feel stretched to the limit with too much to do. My weekends fly by with a Sunday evening to do list as long as the previous Friday's to do list.  I often feel like I am not getting anywhere hence always feeling overwhelmed and eating like I am going to run out of food.  It just makes me feel better and more in control.  I even schedule relaxation which begins to feel like a chore and everything is all about the clock and time.  I wish I could just forget about the time and do what I want when I want but there aren't many days like that.  I am beginning to think my comfort level for stress and busyness is pretty low, I look at others and feel I have nothing on my plate compared to them but I still feel the busyness and pressures of life.  Even fun things like meeting up with family and friends sometimes annoys me because all I want is time on my own.  I just have to come to terms with the fact that this is my comfort level and learn to say no without worrying about it.  So my goal is to say no more, even to lovely sounding things like dinner with family, unfortunately for me I just need plenty of time to myself! I am going to continue with at least two gym sessions a week at the least and try to cut out some of that mindless stressful eating.  


Today marks one year since my lovely man proposed to me, which leaves 10 months until our big day and boy do I have a lot to do.  I will update soon on where I am with my wedding plans.  With plenty more to share, talk soon. I will do my best to update more regularly!

Recipe of the Week/Month

Okay so this post is titled Recipe of the Week/Month which is pretty self explanatory, the reason I have both week/month in the title is because I am really not sure what I will be able to keep up with in the kitchen.  There are some weeks I try a lot of new recipes other weeks I don't try any at all.  This is my first new regular post!  Before working in admin I started studying hospitality which really just means I have some idea of how to cook, I am no kitchen bitch and I have thrown plenty of things out due to being crap!  I don't usually cook tea throughout the week because I go to the gym and get home too late, lucky for me my lovely fiance cooks tea or I have meals like this one that I have made earlier and frozen.  My new favourite recipe is Chicken and Cashews with Broccoli Stir-Fry.  I love stir-fries and I think they are usually pretty healthy plus you're getting plenty of veggies.  Put with some brown rice ;) this one is delish.  Enjoy.


Chicken and Cashews with Broccoli Stir-Fry


2 tablespoons vegetable oil
500g chicken breast, chopped
1 clove garlic, crushed
1 small leek, thinly sliced (if you don't know how to cut a leek, I didn't but now I love leeks, watch this very awesome YouTube video, http://www.youtube.com/watch?v=fm6XGDwjJQA)
1 medium carrot, thinly sliced
250g broccoli, chopped
1 teaspoon cornflour
1 teaspoon chicken stock powder
1/2cup (125ml) water
2 tablespoons oyster sauce
1/2 cup unsalted roasted cashews (I just realised I have been using raw cashews this whole time but they are still so yummy)

  1. Heat half the oil in wok (I use a big frying pan).
  2. Add chicken, stir-fry until tender, remove.
  3. Heat remaining oil in wok, add garlic, leek, carrot and broccoli, stir-fry until leek is soft.
  4. Add chicken and blended cornflour, stock powder and water, sauce and nuts, stir until mixture boils and thickens slightly.

Enjoy. 
Serves 4.


Okay so I don't blend the liquids I just put them all in a jug (sauce as well even though recipe doesn't say that) and mix with a spoon. The sauce is really mild and just nice with the other components, I am not a spicy sauce fan, this one is absolutely perfect for me.
